Reese's Peanut Butter Brownies

In my opinion, peanut butter and chocolate makes one of the best flavor combinations. For a simple brownie mix, you can get different Betty Crocker gluten free brownie mixes but my family prefers our homemade brownies, as you definitely can't do the add-ins such as peanut butter to the box mixes. These brownies are a perfect blend of peanut butter and chocolate and are delicious.


My family first discovered our foundation recipe for this on twopeasintheirpod.com around halloween as it was a great recipe for using up leftover Halloween snickers bars. I would definitely recommend the snickers brownies as a very good recipe with one warning that the original recipe on "twopeasintheirpod.com" is not gluten-free, so replace the wheat flour with King Arthur measure for measure gluten free flour).


To try something new we thought, could we use some of our extra Christmas candy in the same way? So we found all of the recess peanut butter cups we had left (30) to create this family original recipe. I can say that our family, and friends at the treats party, thought that these tasted amazing, and thoroughly enjoyed them. I hope you can enjoy these as much as my family and friends did.

 

Ingredients:

  • 1 c. Butter

  • 2 c. Granulated Sugar

  • 2 tsp. Vanilla Extract

  • 4 large Eggs

  • 3/4 c. Cocoa

  • 1 c. King Arthur measure for measure gluten free flour mix

  • 1/2 tsp. Baking Powder

  • 1/4 tsp. Salt

  • About 30 coarsely chopped Reese's Peanut Butter Cups

  • 1/3 c. Creamy Peanut Butter


 

Instructions:

  1. Heat oven to 350ºF. Grease a 9 x 13 pan with cooking spray. Set aside.

  2. Place butter in medium saucepan on the stove. Heat over medium heat until butter is melted. Remove from heat and stir in sugar and vanilla extract. Add eggs, one at a time, beating well with spoon after each addition.

  3. Add cocoa; stir until well blended. Add flour, baking powder and salt; stir until combined. Stir in Reese's Peanut Butter Cups. Pour batter into prepared pan.

  4. Fluff the peanut butter. (meaning that you beat it with a mixer for a few seconds causing it to have a smoother consistency. It will also allow the peanut butter to drop better.)

  5. Drop dollops of peanut butter over the batter. Using a knife, marble (or gently swirl) peanut butter into brownies.

  6. Bake for 35-40 minutes or until brownies begin to pull away from sides of pan and a toothpick inserted in the middle comes out clean. Cool brownies completely, cut into squares.
